It's an all lady line up with butcher Elke De Belder choosing the tri tip for chefs Trisha Greentree (10 William St and Fratelli Paradiso) and Jemma Whiteman (Cafe Paci) to cook up in their own style.

Jemma goes with a Tri Tip Temaki Party - kind of like a taco party but with Japanese inspired ingredients including marinated tri tip, sesame rice, rhubarb umeboshi and shiso leaf wrapped up in a sheet of nori.
