MSA lamb ribs 5 x 4 rack rib set
Dry Rub
50g ground cumin
50g ground coriander
50g kosher salt
100g ground black pepper
Spritz
1/3 apple cider vinegar
1/3 Beef Stock
1/3 water

Tahini and pomegranate yoghurt

Lemon wedges
Combine rub ingredients and coat ribs well. Set aside for 15-30 minutes for flavours to infuse. Pre-heat smoker to 130°C -135°C
Place lamb ribs in smoker and cook for 2-3 hours, until tender. Using the spritz, spray every 30 minutes to ensure meat remains moist
Remove ribs and wrap in foil resting for 30 minutes.
Unwrap lamb ribs and portion. Garnish with parsley and serve with tahini yoghurt, sumac fattoush salad and lemon wedges.
